Sea & Soil Co-op Sandwich Shop Reopens in Brooklyn with Sliding-Scale Pricing
Sea & Soil Co-op, a worker-owned sandwich shop, has reopened in a new location in Downtown Brooklyn with a mission to serve affordable, quality food while fairly compensating its team. The shop operates as a cooperative with worker-owners Noah Wolf, Gaby Gignoux-Wolfsohn, and Nilda Ortiz. The business uses a sliding-scale pricing model, where customers choose how much to pay for their sandwiches. Wolf stated that the average price paid per sandwich is currently around $16.40, which is the average the co-op hopes to hit. The shop moved from a smaller space in Carroll Gardens/Red Hook after its lease ended, and it secured a non-extractive loan from The Working World, which also became its landlord at the new Atlantic Avenue location. Wolf noted that despite a successful launch, the shop is still barely breaking even.
